If it is true that "confectioner's salt" was the "two handfuls" thrown into the recipe, which made the chicken the best that CHS had ever tasted, then fine salt:
1. Blends better with the other elements than larger granules of salt which enhances the herbs and spices; 2. Blends better with the flour, which in turn allows it to stick better to the already salt-brined chicken; 3. Must be of major importance to the "Original Recipe" flavor since it so impressed CHS that he said it was "the best chicken he'd ever eaten".
Sorry Yves. How to use the salt is the key to OR KFC chicken. The health mongers and their crusade against salt led to KFC's downfall. Threw the whole balance off.

I'd set 56 ounces of Salt (from all sources derived) as the ground floor minimum for 25 Lbs. of Flour.
MSG is not a source. It's a sugar, an not a NaCl-like Salt substitute.

I would say the bare minimum would be 48 oz, but it seems the Colonel approved 4 lbs of salt for a full 25 oz can of seasoning, with 11% of that 25 oz blend consisting of salt. Dustin
