I may have shots of that manual, I'm not sure. I saved a lot, particularly recipes. Some I copy and pasted, and some I just wrote down. Sorry I didn't see this message until now. I only have page 1 and 5 of that employee manual.

I was looking for the old one from probably the 70s or something. When they still used fresh milk and egg wash Dip. I could be wrong but I thought it had the egg wash recipe in it. I'm currently using a ratio of 1 egg white and 1 cup of milk and happy with it but just wanted to compare.

Yep, that is what I have, plus my 1998 manual, and some other directions, the source of which I an uncertain. I believe they were posted on the walls of some old KFC franchise.

Yes that's it! Interesting that even before they switched to milk and egg mix directly in the flour they were already using a powdered version.
