I will see how the recipe 214 looks with no Ginger .. then I will get McCormicks Ginger Powder as it looks similar to Marion Kay's Ginger and that will be fine for my colour testing ... I will just put Recipes 214,164 and 99x alongside each other and photograph those and post the photo here at some stage.
As for taste of 164, I was very happy with the taste of 164 using basil instead of clove seemed v/good to me... so I'm not worried about the Ginger taste. If I know and can prove Ginger is in the recipe, I will just use up my bag of island spice ginger anyway and sod the colour difference. Once I have the recipe ingredients and the approx levels for each one, then that's me finished. I shan't be overly concerned afterwards by the colour of the mix too much.
I just want to get things looking/tasting/smelling as close as I can and then that's me done. I'll probably go back to eventually using decent quality supermarket brands anyway as it costs a lot to import the Marion Kay products to the UK on a regular basis.
It's just a case that I have I to use them now for the colour matching of their 99x. I didn't buy their Ginger though (stupid of me), last time, as I had the large bag of 'island spice' Ginger.
If the colour of 99x were to match with recipe 214, then my thoughts are that 99x lies somewhere near to the area between recipes 164 (which tastes good) and 214 (which may look good), but I have to get the close(set) colour match first ...and then go onto find what works best between them, or if we still indeed need to replace one, or two, things.
It's just not as easy as it sounds, as I'm sure you realise, but I don't think we are a million miles away from a match with the 99x mix.
