Just to add a section on the flavoring from beef. We know tallow was a traditional frying oil, and it has been suggested that various substitutes were tried when it was changed. MarkWinston had a good experience frying in beef tallow.
I have brined a lot of chicken using some beef stock in the liquid and it does add an umami to the chicken. I've moved away from that for the time being but may come back to it.
