My wife's favorite spice for poultry is Celery Salt. Has anyone experimented with adding either Celery Salt or ground Celery Seeds to their KFC clone mix, and if so, how much did you use (on a 200 grams of flour equivalent basis), and how did the chicken turn out?

I'm 50/50 on celery salt. Celery seeds survive heat better than dried celery. Much celery salt doesn't even use celery. Lovage is used.

Does Celery Seed contain any quantity of Eugenol? Is eugenol what I have seen referred to as "the note" (which I presume to mean the defining flavor) on this forum?

I just finished drying a stalk (bunch) of celery. I still have to grind it. I will make celery salt and celery powder with this and then give it a try. Seeds are bitter.
