I recently acquired ground sumac (dried fruit). Not for fried chicken but since I never had it I wanted to try it. Once again it is not like anything else. There has been very little discussion about it on this forum. I will give a deeper analysis soon. Some make lemonade with it. It can look like KFC vials C, E or J.

Yves and I tried both sumac and za'tar. From there we shifted to citrus. Vial J could be either sumac or cayenne pepper.

I'm going to try sumac on various foods. Perhaps one day on chicken.

I’ve read a good way to try sumac is to grind it up and mix with salt. It is very coarse by itself and perhaps needs to be powdered and mixed to be less concentrated for our recipes. It is supposed to be lemony without the bitterness of lemon. Supposedly CHS used lemon accent back in the day, and I’m thinking it might be a good way to approximate that.

Yves and I both tried sumac and Za'atar. We were looking for that citrusy taste. We shifted instead to lemon pepper and lemon/orange zest.
