This question has cropped up in several discussions. Here's the result of my analysis of the issue. Caveat: This is what's available in Germany. I cannot say for certain it is the same in your region of the world, but offer it up for consideration. ExHibit A: Two types of "Garlic Powder" (one is not garlic salt, that is a separate issue.) flic.kr/p/RUMs6WExhibit B: Ingredients - Zutaten: Garlic (Allium sativum) flic.kr/p/RUMsqoThe difference between the two? "gemalen" => powdered, pulverised. It is the whiter, lighter colored of the two. "fein granuliert" => granulated, fine granulated and is more yellow in color. Exhibit C: Comparrison of fine granulated Garlic with, " The Picture." flic.kr/p/S5NjMuIf we were to use pulverised or powdered Garlic, which is even lighter in color, it becomes readily apparent that Garlic Powder (I hazard also Garlic salt) can not be and never was one of the Original Eleven Spices and Herbs, regardless of how such a product might age over time in a hand sealed glass vial. jm2cw. Yes, having seen those photographs, I'm inclined to agree with your conclusions TT/ThePieMan.
Did you compare the same glass vial content to your Ginger Powder too?

Yes indeed, Ken. The last photo I posted in that Vial thread had the eleven plus the additives, and when looking at the picture description, its easy to identify the ginger for comparison with the garlic.

Thanks very much for that information, it's very useful. I see you have done a lot of great work to try to colour-match the vials.

I believe garlic was an added element. It was used to increase the savoriness lost when the Corporation was forced to eliminate Aromat from the equation. This is my opinion which I don't feel is necessary to defend, as garlic is clearly listed on present day ingredient lists.

So far in my experiments, the closest I've came to getting the recipe right is using garlic salt as a minor ingredient. To me there is no question that it is a needed part of the flavor profile.
