Recently I was watching this on Youtube: 18th Century Fried Chicken by Jas Townsend & Son. and I think there are some interesting ideas here worth pointing out and sharing. Apparently they marinated their chicken with various spices of which lemon zest was referred to as a spice, then breaded it with a seasoned batter before deep frying in oil over an open fire . Lastly they garnished with deep fried parsley. Chicken certainly looked good. Cheers.
