Fascinating Video, worth serious consideration.
It also causes one to pause and consider, what about other ingredients and how might that impact how we as researchers investigate the flavour profile of the O.R.

Enjoyable video TPM. People might think we are nuts but herbs and spices are fascinating.

Another interesting factoid to come out of Parry's book is that Origanum (Oregano) at the time of the book's writing, referred to, "Mexican Oregano." so, IF CHS did use oregano in his early formulation then it is more than likely it was not Mediterranean-sourced, but Mexican, as the book implies this was the common domestic source at the time.

Just got my hands on some mexican oregeno. Interesting stuff, wasn't expecting it to be spicy like pepper. Can't wait to try it out.

very interesting!
Regular oregano is an Italian and Mediterranean spice with minty undertones. ... Mexican oregano has lemon and citrus flavors as well as some tones of licorice. These flavors are a better fit with Mexican dishes. It is often found in chili and salsas because it pairs beautifully with spicy chile peppers.

I use a ton if it in my chili seasoning, the best on God's earth, which remarkably has the "note". I sent some chili seasoning to Yves years ago and he loved it. I have been providing that seasoning to many around here and am losing my ability to keep up with demand. I will leave the recipe to my children. I worked on it for 40 years. I was trying to recreate the chili made by various DeFrates family members, and Tulsa's Original Chili Bowl. Don't think that the KFC OR will escape me.
