This is a really cool documentary/vox pop about the question, what makes great fried chicken. I found it very interesting, enlightening, and informative.

Can't really hear it. But for me?
1) Juicy chicken. No one wants to bite into a overcooked, dry tired piece of chicken. 2) Crispy coating. Yeah, the Colonels is weaksauce, but on purpose. Most drive for that crisp, not brittle, overdone or burnt crunch. 3) Flavour. Flavour baby, flavour. That's what I'm talkin' about.
Two out of those 3 are process driven.

That's interesting, I had no problem with the sound. I did find it thought provoking though, especially all the different and similar ways of prepping the chicken.

Whilst rummaging around I came across this reference to recipes from an old vintage pamphlet, 101 ways to cook great chicken. The very first recipes are quite insightful and worth looking over. Nothing new to this group of course, but interesting.
