I really like KFC's potato wedges. Here is the closest I have come at home. I adjusted this recipe. YouTube video KFC Potato Wedges Cut russet potatos into wedges Boil 5 min, less if wedges too soft Cool in cold water, then dry Batter 1 cup self rising flour spice mixture (consider 1/2 to 3/4 of recipe) enough water make batter (~1 c) Spice Mixture 1 tsp Salt 1 tsp MSG ½ tsp Black Pepper 1 tsp Sage 1 tsp Oregano ½ tsp Paprika ½ tsp Cayenne ½ tsp Cumin ½ tsp Turmeric ½ tsp Onion Powder Batter wedges, drain on a rack, then freeze on parchment paper lined tray Fry 375F for 5 minutes or till done

Very good. I cannot comment on whether they are like the KFC version as I've never had them. Next time I would pass on the freezing step, and put the cooked spuds in the fridge to keep cool. Then batter them when ready to fry. Just my opinion.

Glad you tried them! How much seasoning did you use and what did you think? The full amount I thought was too strong.

I put all the seasonings in a mason jar with the flour. Shook it like it owed me money several times. Poured half into a bowl and added water to make a thin paste, then dipped cooked wedges in it and put it on a sheet then froze them.
As far as I know we don't have them at our KFC's here. Their chicken is so bad I can't remember the last time I ate there. Mary Browns chicken is king here and they have what they call "taters" that are seasoned wedges. And they're awesome!
Anyways, I'll definitely be making this again.
