The Colonels patent called for 15psi. "Then the chicken should be cooked for about 8 minutes under about 15 pounds per square inch of gauge pressure to maintain the 250° F."
Colonel Harland Sanders stated he fried the chicken at 29 and 7/10 lbs pressure" for 7 to 7 1/2 minutes, on the The Tennessee Ernie Ford Show (1956-1961) .
From what I'm seeing, current non-commercial pressure fryers are about 8 psi. Walmart lists Magefesa Star Belly Stainless Steel Fast Pressure Cooker MGF1177 Features Material: Stainless steel Maximum regular pressure: 8 PSI
The Star Belly are very similar to the Star but have a curvier design. (Both can be used for frying.) Though I cannot find anything for the Star line, I would assume the PSI to be about the same.
Magefesa make a series of super fast pressure cookers that can be set to 15 psi, but they do not include fryer designs.
Regarding the (more expensive) Fagor pots. This post was in a YouTube comment:

The Fagor Classic 10 Quart Pressure Cooker made in Spain, (which is what you have in your video), only produces .55 bar of pressure or about 7.8 p.s.i. and not 15 p.s.i. Nice Fried Chicken!!
Some comments have said the Alcoa Wear-Ever is about 5 psi. I can't find any official specs for that product, though.

Fagor USA went out of business so parts like gaskets are harder to get. Expensive mistake if you can't get a gasket at some point.
Magefesa Star Belly won't fry right because of the bulge. Oil doesn't stay even temp in the pot b/c of the bulge.
Checked with Magefesa tech support and verified via my own calculations 7-8 PSI stock. It therefore works like the Chicken Bucket. Same PSI almost.
I modified my Star 8 with a different stem (Prestige) on ebay, and weight (~2 oz. red weight on ebay mislabeled 70 kPa) and a metric drill bit I ordered (on ebay) from Germany to get the precise diameter. Now exactly 12 PSI and the safety valve blows at about 13 PSI. Works perfectly even though not 15 pounds. At 15 pounds the safety blew before hitting the jiggler pressure.
MOD AT YOUR OWN RISK AND DO YOUR OWN CALCS. TEST IN THE GARAGE WHILE YOU ARE INSIDE THE HOUSE BEFORE USING. IF YOU HEAR A BOOM, YOU SCREWED UP.
