I haven't tried this recipe... it has been copied from Whats4Chow.com KFC Chicken Wings. How to Make KFC Hot Wings at Home

Ingredients * 16-24 Whole chicken wings For the Spice Blend * 3 Tsp Paprika * 2 Tsp Onion salt * 1 Tsp Dried sage * 1 Tsp Garlic powder * 1 Tsp Oregano * 1 Tsp Cayenne pepper * 1 Tsp Cracked black pepper * 1 Tsp Dried basil * 1 Tsp Dried marjoram * 1 Tsp Dried coriander For the Curing Brine * 100g Dairy or Kosher salt (any non-iodated salt is fine) * 1 Tsp Whole black peppercorns * 1 Corn of whole allspice * 12.5g Saltpetre * 1 Tsp Ginger * 50g Sugar * 15g Bicarbonate of soda * 1 Tbs Dried chilli flakes Other * 2 Cups all purpose flour * 1 Tbs Cayenne pepper * 4-6 eggs lightly beaten
Instructions 1. To start prepare the curing brine as we did in part 1 and part 2. 2. Remove and discard the wing tips from the wings and cut through the center joint. Place the wings in a sterilized container. 3. Sprinkle 1 tbs of crushed chilli flakes over the wings, then pour in the brine. Put the lid on the container and allow the chicken to cure for a full 12 hours in your refrigerator. 4. Combine the second half of the spices with flour and add 1 tbs of cayenne pepper, then sprinkle a layer of the seasoned flour over the surface of a large platter. 5. Lightly beat 4 eggs. 6. To coat the wings, first dredge them in the flour, then dip then in the egg. 7. Dredge them in the flour again to get a good solid coating. Transfer the wings to the floured platter and allow the coating to set for 20 minutes. 8. Fill your pan with oil to a depth of 25mm or 1 inch and heat this to 150c or 300f. Fry the wings for a full 20 minutes turning halfway through. 9. Remove the wings from the oil and drain on kitchen paper. Allow them to stand for 5 minutes before serving.

I know this recipe but the crust is not like,,,,,,,,, Salpetre in the brine? Maybe? Its all about how you coat the wings and the right flower. I have bought some commercial coating and it i must say, its pretty close No pressure pan needed! I have heard that they come precoated to the restaurant. Maybe frozen? I want to know more about the coating!

KFC is quite popular in China. ( Lots of good photos, worth looking at in the last two links.) As such many companies have produced their own copycat version of the seasoning and breading. This one has a nice video ot go with it on the preparation of Spicy Fried Chicken. ( I hope it works… (original source)) Addendum: I managed to screen cap the video and upload it to youtube, as the source was doing all sorts of weird things like asking me to log into the shopping site etc. Explanation of the Vid. First, theres a ton of Hot Wings videos on youtube. Easy to search out. Next, this is the latest I've seen detailing the KFC Chicken Making Process. Although its dated 2014, there is a useful statement here, "... its like swimming in fairy dust..." This is relevant to the OP's question regarding the breading (I think the question was asked...) for hotwings you'll need cake flour with some corn starch or rice flour or arrowroot added to move it towards a tempura like breading. The video above also details spice marinating the chicken for 2-6 hours, then double dipping the breading: 1. wet, spiced wings go into the flour, then are dipped into water and 2. dumped back into the flour. If anyone is double dipping, the Asian spider shown in the video is really useful. Another video I saw, used a perforated plastic, rectangular basket inside the wash tub to process more chicken. For home use, I guess a salad washing bowl would do the job. TT

As I mentioned on the old KFC forum, the wings need to be coated three times. I have also found out that they are pressure fried the same as the chicken which really surprised me. I know when I make hot wings I just use a deep fryer and they come out with a nice crunchy coating. My flavouring is in the breading and the sauce: 1 1/2 cups of plain flour 3 tsp paprika 1/2 tsp cayenne pepper 1 tsp garlic powder 1/2 tsp onion powder 1 tsp white powder 2 tsp salt pinch of cracked black pepper Put all dry ingredients into a ziplock bag. Wet chicken wings (cut in two and wing tips discarded). Place a few at a time into the flour mix and press coating into the chicken. Continue until all coated. Heat oil and cook in batches (depends on size of fryer). Combine 1/3 hot sauce (or sweet chili sauce) with 1/4 cup of butter in a big bowl and melt. Stir to combine. Add cooked chicken pieces and toss to coat in the sauce. The coating still remains crispy long after the sauce is added.

BecInOz I'm having a mealtdown, I've looked everywhere... even on the internet... I can't find white powder anywhere... is it even legal? Shhhhhh! The secret ingredient... lol. Can I substitute white pepper?
