I wrote to Marion Kay recently to establish what herbs were contained in their mix called Italian Seasoning. In a written reply they say it contains the following herbs: - Thyme (from Spain - Fancy Spanish)
- Oregano
- Marjoram
- Savory (Summer)
- Basil
- Sage
What did interest me, is that their herb seasoning here, has both 'Savory' and 'Thyme' in it and that has made me now consider that the company is happy to use both in a recipe and not just one in place of the other.
I cannot exclude the case that both herbs could be in the Colonels Original Recipe, whereas prior to this, I believed it might have been one herb 'or' the other.
I will have to try both in my recipes at some stage, to see if it helps to improve the aroma of the raw recipe mix and improves the flavour of the cooked chicken.

I have also thought that all were present, but some would have been listed as "poultry seasoning" for purposes of the vials. I have a recipe melding now with all of the ingredients from the Sexton's lineup. It looks promising. It is based upon the ingredient weights listed on the 1970's seasoning bags.

After a weekend full of jars, I at least know this, there is no Clove or Allspice in 99X. Not even subtle levels are there under the peppers. I think we would have been in a good position when Mark first opened his canister of 99X and described its smell, that was a huge leap in the right direction.
I should have smelled and did many taste tests to be certain of things, and not influenced by others along the way.

I used a Tbsp of Italian Seasoning to 2 cups of flour. Tasted good.

I always considered oregano and basil to be Italian seasoning. NOT poultry seasoning. They are far too strong in the wrong way for poultry.
