I've heard a story wherein the first time CHS added MSG to a batch (presumably with 25 lbs. of flour) he simply tossed in two handfuls. When scaled to 200 grams of flour this might (as I see it) range up to ~10 grams of MSG. How do you see this? Any truth to this rumor?

Another way of looking at where I'm coming from with this is:
What is the upper limit for MSG in 200 grams of flour plus salt, herbs, and spices before flavor is negatively impacted? And additionally, what is the upper limit for MSG in 200 grams of flour, etc... at which no additional MSG leads to flavor positive benefits?
What got me thinking of this was a YouTube video in which a chef added 2-1/2 TBSP of MSG to each cup of flour he was preparing as deep fried chicken coating. His assessment was that the chicken tasted delicious. I'm figuring 2-1/2 TBSP of MSG to be on the order of 27 to 33 grams of MSG. Call it 30 grams of MSG per cup of flour.

2.5TBS MSG per cup of flour is an enormous amount. There have been lots of previous discussions on the handfuls topic - what even are two handfuls? One single handful twice? Two hands cupped together? It is not clear it was MSG, but certainly could have been. Another interesting suggestion was a vanilla / ginger flavored box cake mix that would be mostly flour. Mild herbs are a possibility, also, of course, but I personally favor the MSG solution, although it seems likely that at scale salt was probably scooped / measured, so why not MSG, vs handfuls?
As he was a big man, it seems likely to amount to about a cup, or more, or 6.8 oz per 400 oz (25lbs) of flour, or equivalently 6-7grams per 400 grams of flour.
I don’t know an upper bound. The old accent tins have a recommended usage rate for 40lbs of meat and vegetables.
The two handfuls was to have been for a boat trip with 400/500 chicken dinners, plus probably a bit extra. If you got 2+ dinners per chicken @ 3-4 pieces each, or a pound plus per dinner, that would require a couple batches of 25lb flour breading lugs equivalents as each does about 200lbs of chicken. It isn’t clear whether the handfuls would have been for a combined batch or not. If combined you’d want about 2 cups.

I've posted this in the past, but back in CHS's day, a handful, or several handfuls meant no specific amount. It was just thrown in at random. Therefore, use to your taste.

The same as white pepper, unless I have increased the peppers to mimic extracts. Of course, the white pepper is the heaviest ingredient, besides the salt.
