It all began several months back when one of our good members discovered a photo of a handwritten recipe for BBQ sauce. The recipe of course belonged to Colonel Harland Sanders himself, dating back to his very own restaurant which operated between 1930 and 1955 or so.

On closer scrutiny of this most amazing find, it was noted that it contained precisely *11 herbs and spices*, along with other such condiments as tomato catsup, worcestershire sauce, molasses and smoked salt.
At first, I reflected to myself, "What a strange co-incidence... it has 11 herbs and spices just like Colonel Sanders' Original Recipe.", and then it hit me like a ton of bricks! The Colonel only ever created one chicken recipe for Kentucky Fried Chicken (i.e. Original Recipe), and when extra crispy had been created by the suit and ties of KFC Corp. WITHOUT consultation with the Colonel, he announced loudly and with an element of disgust, that it was nothing other than a "...doughball stuck on chicken!". As you also would have surmised, he had absolutely nothing to do with the later invention of "Hot 'n Spicy" chicken either... and if any of you have ever eaten it, you will also note that it most definitely is NOT based on any recipe of Colonel Harland Sanders either!
I would guess MSG, salt, "synthetic essence" of cayenne and not much else... Not very imaginative, eh?
It was at this moment that a light globe illuminated over my brow: I thought, what if I use these 11 Herbs and Spices - as written in this authentic BBQ recipe - in my own version of what I believe the Colonel would have put forward, had KFC Corp actually taken the time to ask him for a recipe for a "new line" of spicy chicken!
I carefully perused the ingredients and at once realised that several of spices were already being regularly utilised by both myself and other O.R Replicators right here on this forum! The spices were indeed ingredients used generally in fried chicken recipes around the globe! "Dadgummit!" I thought... I gleefully exclaimed to my Mother that if Colonel Sanders had ever been asked to make a recipe for Hot 'n Spicy fried chicken, then I have little doubt that these are the herbs and spices he would have used!
Woohoo!
So, using - for the most part - the same ratios as written in his recipe I made up a batch... for those taking notes I actually had to lessen the quantity of pepper (way too much for 3 cups of flour in a fried chicken
recipe), and I had to increase the quantity of chili flakes and cayenne (way too little for 3 cups of flour in a fried chicken recipe ) And the result? Bloomin' Awesome! It is EXCELLENT fried chicken, which is far superior to anything you'll find at a modern-day KFC! Hands down! In fact, it is now a staple in my kitchen arsenal, the only adjustments I will be making is regarding the qty of cayenne, or chili flakes (i.e. more for adult tastes, less for children).
Here then, is the delicious recipe as I trialed it:
Herbs and Spices:
1. 2 1/2 tsp Black Pepper
2. 1/2 tsp Mustard
3. 1 tsp Cumin
4. 1 tsp Chili
5. 1/2 tsp Cayenne
6. 1/2 tsp Paprika
7. 1/4 tsp Celery Seed
8. 1 tsp Sage
9. 1/4 tsp Ginger
10. 3/4 tsp Allspice
11. 1/4 tsp Cinnamon
Flour Mix:
2 1/2 cups of breading flour
1/4 cup of cornmeal
1/4 cup cornstarch
1/4 tsp Baking Powder *
1/8 tsp Baking Soda
1/2 tsp sugar, dextrose or maltodextrin
2 tsp MSG (Ajinomoto)
7 tsps Table Salt (For bone-in chicken pieces. Use 6 tsp for breast fillet.)
* Or increase to 1/4 tsp Baking Soda and add 1/8 tsp Cream of Tartar
Regarding the flour, I based it on Jbishops excellent analysis of modern-day KFC's Extra Crispy recipe. Personally I loved it, however some folk might prefer to skip on the Cornmeal... Try it and see
