Has anyone attempted a KFC cloning effort that skips Sage altogether? I'm getting an urge to try this. I'm having the same urge, and have been going back and looking at some other recipes/data. Two quick mentions, both of which will be controversial to some: The Eula Gordon/Gibson line of recipes that has ended, for now, with Ledington, did not include any sage or savory on the face of the recipe itself. Its green herbs on the face of the recipe were limited to Thyme and Basil in equal amounts of 1/2 of a unit each, and Oregano (Origino) of some variety or another (possibly Marjoram adjacent, possibly not) at a rate of 1/3 of a unit, for total green herbs on the face of the recipe of 1.33 units (out of 15 units total). I tested sage specifically with respect to 99-X because it is a labeled ingredient. Of course, just because it is a labeled ingredient in 99-X does not mean that it is an ingredient in the OR for a host of reasons, including the possibility that it could be a red herring that came to be listed on the label due to the KFC lawsuit. Regardless, it is in the 99-X of today and it was tested, and the test results indicated that it was not present in 99-X in an amount greater than 0.5g per 25g of 99-X.

That's a very astute and profound observation (I.E., that Ledington's [which is Claudia's, or perhaps even CHS's] had no Sage or Savory).

Perhaps the two greatest mistakes the Chicago Tribune made with the Ledington recipe were (1) mistaking teaspoons for tablespoons, and (2) not knowing that salt which is external to the recipe must also be added.
