On avoiding burnt spices and hot oil
If the home cook wishes to prevent spices from being burnt at the bottom of a frying vessel in which chicken is to be fried, meanwhile avoiding the risk of handling scorching hot oil that is due to be filtered, then it is advisable to use no spices whatsoever. However, the methodology upon which Sanders' fine country-style gravy is based did involve – to some degree – burnt spices, viz. cracklings, and hence I do not wish to be understood that Kentucky has not any.

It is understood, that the technique to enrich human enjoyment of 11 special herbs and spices, which sprung from the imagination of a silver haired creature, one should theoretically transport through the mechanisms of time, back to a when the process was maximized in effect. Thus no oil would be near your pie hole when the chicken is consumed, since it was purchased from Fried Chicken of Kentucky.

Practical experience is the best guide. No set of instructions, however well written, or whatever its exactness, can replace the practised eye and accuracy that a recipe or general rules alone can provide.
What Sanders told us, and what others and I will say to you, may be as different as chalk and cheese.
