Many years ago I looked at the cooked breading of KFC under a
microscope and I noticed blacks specks and red specks. I knew the
black specks were pepper but always wondered what the red
ones were. I though maybe red pepper. Now after reading your
forum, I bought some Mace since I have never seen it. As soon as I
saw it, I knew those were those red specks. I cooked up batch #3.
I used 1cup cake flour (wrong advice)
2 1/2 TB 99X
1T Flake Salt
1/2 tsp fresh ground Tellicherry Pepper
1/4 tsp fresh ground Corriander
1/4 tsp Mace.
I did my normal breading pushing in the seasoned flour and
cooked it my normal pressure frying method.
BINGO!!! The Original Ketucky Fried Chicken taste. I had tears in
my eyes. After years of searching and trying. I don't know if I
would get this taste without 99X but you must add to it. I always
thought is was a special pepper and sage. The corriander is the
difference and the tellicherry pepper. I don't know what the mace
does. Do not use cake flour that was a mistake. I have always
been able to duplicate the breading with regular flour. Thanks for
the 99-X tip! The main key is the Tellicherry pepper and just a hint
of fresh ground Corriander. With just a little tweaking, we are
there. The pepper makes a big difference. Do not use too much
Corriander. It should be a balance between Corriander and Sage.
These are the ingredients I know are in there: Tellicherry pepper
White pepper Corriander Sage Thyme Mace Garlic Powder Good
