Time flies, and technology changes. In the past we have discussed various mechanisms and workarounds for holding the Chicken after its cooked, and these are still valid. however, in recent times the prices and options for countertop steam ovens have considerably become more accessible. I am not directly recommending this particular oven, I don't have one, yet... but Toshiba is making serious inroads into this domestic consumer area with several different models. I thought it might be worth mentioning here.
