If its wild rabbit (hares we have here) I'd recommend par-boiling for an hr or so to tenderize the meat. They are so lean that they can be tougher than nails. Pen raised I've never had. Mike |

I’ve been meaning to pressure fry rabbit with my recipe too. But here is Calif. they’re so damn expensive. About 25-30$ for 2.5-3# frozen bunny. But one of these days… it shall be done…
