There it is guys the dumpling recipe with nutmeg. 1/8 tsp of poultry seasoning and a pinch of nutmeg. You can inference that whatever poultry seasoning he was using didn’t contain nutmeg. Dustin Thanks Dustin, I've read this before, and unfortunately many researchers took this as proof positive that the Colonel used nutmeg in his KFC Chicken gravy, and by extension that it is in the O.R. The trouble is the logic does not follow. this article was a puff piece for the general public, put out at a time when the Colonel was sworn to secrecy. How to get around this? give people a representative, down home, country recipe, deal done.

My mother, as for myself, made/makes excellent Southern gravy. That's all the Colonel did. My Mom fried the chicken, then made the gravy out of the residue in the cast iron skillet. I don't use nutmeg because it isn't needed. Here is the caveat, I can't eat gravy because of my gout. Go figure.

I guess I should clarify my last statement. When you read the recipe for chicken and dumplings, it calls for "flour" not "seasoned flour" it also calls for "fried chicken" not "KFC Fried Chicken." The recipe is for any housewife to replicate in their own kitchen. the seasoning it calls for is pepper and nutmeg. Interestingly enough, there is no suggestion to add salt. Perhaps there is sufficient salt in the canned broth or the paltry seasoning?

For reference only, quite some time back some manuals were shared around, one was a 1970's Store Manager's Manual (apparently) and the other of a more dubious source, but seemed to be contemporary to the Store Manager's Manual. Here's the "Official" method for KFC Gravy, which I'm sure you'll note are almost identical. However, this is not the way CHS made his gravy - just to get that one out of the way.
Note: (if I've got the math right) ... The ratio of cracklings to gravy mix is 3:1 - which is slightly MORE than the ratios given for 1971 in the TCK images above.
Enjoy. I tried this recipe my gravy result its like pancake too much flour. Very sticky its like a mud. I followed all numerical value what was posted. I made a try using recipe from other forum its very good ratio with amazing result.
