PostPosted: Fri Oct 01, 2010 2:17 am Post subject: Reply with quote KFC now doesnt depend on the OR , it was changed forever and the cusomers want words such like , crispy , yummy , and when they see 11 vials of spices and tell them it is their secret recipe they will fight to have it .. this is the time of media ,, even us in our researchings affected by others notes and excperience more than the reallity , when we first discovered vanilla bean and how much it looks like vial c , i was sure most of us will say that the recipes using it are the best yet , for God sake , is it realy important for the taste we rememper from the past .. i dont think so , but we like it not because of its taste , just because it is like vial c ... i want everyone of us to get back to the road of taste .. the best recipe is the one that taste like the OR even if it was composed of 3 spices or it is composed of 14 spices .. but we are still fighting as about pepper ( to consider it one or two ) , we have to start from the taste , the dominate taste and then go up to add spice by spice as we feel we are approaching to the secret TASTE .. this is one from the 4 critics say about kfc ( the year is 1976 ) Sad(( “ Beard: I find it very odd, having tasted this chicken on several occasions, how the quality varies from one locale to another. It can range from crisp and really quite acceptable to something absolutely revolting, a slimy, slick batter that slides off, leaving a very disagreeable-looking piece of chicken underneath. )))) i think the different from one locale to another is more than 50 % lets be wise and dont fight about 1% please , i am sure if i put 13 spices in a recipe that will not cause the different in the taste as Bread had descripe .. i am sure just 3 or 4 spices bring more than 80% of the OR all our good friends let us start by making this core ( of some essential herbs and spices ) for our next research , and lumpy and every one remember the magic of the old days OR, help us with this essential CORE for the history please

now there are only 4 spices shared between these two recipes ( white and black pepper , savory , and cloves ) and by counting black pepper and white pepper as one ( like the last brouse b recipe ) they become only 3 shared spices : pepper , savory , and cloves there are 7 herbs and spices different between these two recipe and still lumpy think they are very close to the OR and the last bruceb recipe has fennel , vanilla bean , cayenne , and nutmeg dont excist in TC32 that is too much for ( something missing ) Lumpy , I think we have a huge problem fiding the origenal OR here ... They were from different timeframes; KK2.0 being first. Up until that point in time, KK2.0 was the best recipe Kid Knievel had created. Nowhere did I suggest that it was the O.R.
Regarding TC32, it was created much later after we had learned a lot more about the 99-X ingredients thanks to Dustin and his "Hubble". At the time TC published it, it was closer to the O.R. than any recipe I had previously tasted and it continued to be until last week.
In BB10-0131, Nutmeg is equivalent to Mace, Vanilla is the original ingredient which was subsequently replaced by Cardamom IMHO. I believe Fennel was the flavor which was missing since we began this quest.
Deep Taste, it is unfair of you to take my posts out of context to make your point. If you have an opinion, go ahead and state it as such rather than trying to present it as fact.

Lumpy June 7, 2013 recipe:
Here's the recipe I cooked up yesterday. No photos again because my whole famn damily wanted boneless, skinless chicken breasts so I figured there was no point in taking pictures. B/S chicken only takes 4 minutes to pressure fry.
Base ingredients as pictured on KFC Japan website.
3 tsp Mixed Peppercorns, medium ground (President's Choice) 1 tsp Sage, ground (Marion-Kay) 1/2 tsp Coriander, ground (Marion-Kay) 3/8 tsp Jamaican Ginger, fine ground (Marion-Kay) 1/4 tsp Allspice, fine ground (Spice Islands) 1/4 tsp Garlic, powdered (Spice Islands) 1/4 tsp Rosemary, ground (Spice Islands)
My added ingredients.
1/4 tsp Nutmeg, ground (Spice Islands) 1/2 tsp Thyme, ground (Spice Islands) 1/8 tsp Celery Seed, ground (Club House) 1/4 tsp Chili Powder, ground (McCormick)*
1 tsp MSG (Accent) 2 tsp Fine Flake Salt (Marion-Kay) 1/2 tsp Onion Salt (Club House)
*PLEASE NOTE: Chili Powder is quite different than ground Chili Pepper. The ingredient list on a 50g jar of McCormick Gourmet Chili Powder is as follows: Chili Pepper, Cumin, Salt, Oregano, Dehydrated Garlic.
The flavor is more intense because of the short cooking time and although it has the O.R. "note", it still needs some work. I may increase the amount of both Rosemary and Nutmeg on my next attempt.
The Onion Salt is a definite keeper.

Lumpy:
Brining is not necessary, but I do it because I believe it makes the chicken juicier.
In a Tupperware or similar container, stir the following ingredients into 4 cups of water. 1 tbsp Vinegar 1 tbsp Salt (non-iodoine) 1 tbsp Sugar, white 1 tbsp MSG Add the chicken. After 4 hours, remove the chicken from brine and rinse in fresh water before cooking.

Why didn't you tell them that's why you're now using "Tahoe" as a member name instead of Ellsworth? Did you tell them that you have been flooding this forum with inane posts since October?
I suppose it's time for someone else to complain to the forumup admin about a certain crybaby who should rightfully be ignored for what he is.

In fact, even the simplest research will show that Colonel Sanders' everyday vocabulary was laced with profanities and, in more than one instance, he was considerably under the influence of alcohol. He was even so drunk at one point that he couldn't read a simple radio commercial script. So The Colonel needs to get down off his high horse and spend some time with us mortals.
Ellsworth's Place is your board and The Colonel's Kitchen is his and you each have the exclusive right to delete what you want and/or ban whom you want, but sometimes common sense dictates that you take a step back before you do either. This was not the case at EP or at TCK as it relates to me.
If you'll accept some advice from me going forward, please understand that many folks enjoy humor because it makes them happy, so when someone posts something they mean to be humorous, don't take their comments literally.

It seems to me that forumup admin has many more pressing issues to deal with right now than this kind of crybaby complaint. I suppose you'll need to deal with it anyway, but before you do, I should apprise you of some pertinent facts. 1. Ellsworth was banned by the site admin several months ago for abusive conduct. 2. Foreseeing that outcome, he created several aliases prior to his banishment. He is currently using the membername, "Tahoe". 3. For the last several weeks, knowing that the site admin is absent due to personal matters, Ellsworth has been flooding the forum with inane and unwanted posts. Ask any legitimate member. 4. In his complaint, he infers that his family was distraught over some of the posts at kfc.forumup.co.uk. The problem with that statement is that he has no wife and no children, so what family members is he referring to? 5. Forumup records will clearly indicate that he has made these kinds of complaints before and he usually waits until the site admin is away or his/her email address hasn't yet been updated before he strikes. 6. kfc.forumup.co.uk has existed for over 5 years and it contains a wealth of valuable research. Ellsworth's forumup site contains nothing of value and exists merely to publish the address of his private domain. This is magical, folks. I'm so happy with this batch I could shout, "Eureka!" like Archimedes did, but he yelled it while running naked through the streets. I skipped that part so my neighbors wouldn't lose their appetites (or their stomach contents).
I read Brodie's recent comments about Sage and I was very tempted to add an extra 1/4 tsp to my mix, but I decided not to at the very last moment. Like Brodie and TC, I too believe Sage is a key ingredient in the O.R., but if you use a quality brand which is ground rather than rubbed, I believe 1 tsp is enough. If you use rubbed Sage you probably need more.
Regarding Vanilla, I fervently believe this is the ingredient we've been missing. At 1/8 tsp, it provides just a hint or maybe only a whisper, but that's perfect in my opinion.
Although I'm overjoyed with L0721, I know there are still a couple of variations which others may wish to try before they give my recipe their Seal of Approval.
I'm no longer concerned about Vial "C". Vials "E" and "J" are the ones which may have options. Imho, the only possible option for Vial "J" is Mace and, if it is included, then Nutmeg is not an option for Vial "E". Along with Nutmeg, Cloves is the only other option for Vial "E".
The reasons I selected Allspice for Vial "E" are twofold. First, it was identified as an ingredient in Sexton Poultry Seasoning and the others were not. Second, Allspice mimics the aroma and flavour of both cloves and nutmeg, so I considerate it to be an acceptable subsitute for them.
L0721 will be the only recipe I cook for the foreseeable future since, frankly, I don't think I can do better. However, I would be overjoyed to receive feedback from y'all after you try this O.R. attempt.

Unfortunately, this guy is like a bad weed. Just when you think he's gone for good, his site will rise from the ashes with its distinctive odor of garlic and onions.
This is like the friggin' SuperBowl 'cause it happens every year, except nobody has yet run an Ellsworth Unretirement Pool where we could make some money.
The truth is that Ellsworth's Place is closing because he doesn't want to pay the annual hosting renewal fee. And since ShoutMix is eliminating its free ShoutBoxes, he would need to pay to keep that subscription active too.
He'll merely revive his free ForumUp site or start a new one. I'll give him no more than 2 weeks to unretire.

Back in the late 70s and early 80s, each summer, my wife and I took our daughters to the world's longest fresh water beach on the shore of Georgian Bay. It's a place called Wasaga Beach.
There was and still is a KFC there. I'll explain the significance of that fact soon.
Because I'm way too impatient, I couldn't wait until tomorrow to cook my latest O.R. attempt, so I cooked it for dinner today.
When my daughter bit into her first piece of chicken from today's batch, she said, "Dad, that's how I remember KFC from Wasaga Beach."
That almost brought tears to my eyes.
What follows is my latest recipe (and the light brown sugar is still there). I hope someone will try it and provide some feedback. And thanks KK, for opening my eyes (and nose) to Mace.
L0330 - 30MAR2010
~Chicken~
1 whole chicken, cut in 9 pieces to KFC spec or equivalent pieces
~Brine~
4 cups Water 1 tbsp Vinegar 1 tbsp Salt 1 tbsp Sugar, white 1 tbsp MSG
~Flour Mix~
1 cup soft wheat flour such as Brodie XXX self-raising cake/pastry flour 1 1/2 tsp fine flake salt
~Spice Mix~
1 tsp Black Tellicherry Peppercorns, medium ground (s) 2.17g 1 tsp White Pepper, fine ground (s) 2.38g 1/2 tsp Coriander, ground (s) .65g 1/2 tsp Sage, rubbed (h) .32g 3/8 tsp Ginger, Jamaican, fine ground (s) .55g 1/4 tsp Cayenne (s) .50g 1/4 tsp Mace, fine ground (s) .60g 1/8 tsp Bay Leaf, powdered (h) .20g 1/8 tsp Cardamom Seed, Green, ground (s) .29g 1/8 tsp Cloves, fine ground (s) .26g 1/8 tsp Summer Savory, powdered (h) .24g

Combine Spice Mix with Flour Mix and mix thoroughly. Place in its own bowl. Remove chicken pieces from brine. Rinse well under cold running water. Pat dry. Dip each piece in egg wash. Transfer to flour/spice mix and press down hard on all sides until each piece is completely coated. Upon batch completion, cook immediately. Do NOT refrigerate pieces and cook later.
~Cooking Instructions~
Pressure Fry - Bring Cottonseed oil to 200C/392F. Cook chicken for 1 minute open. Do not stir. Attach lid. Over "high" heat, bring pressure to 15psi. Reduce heat to "low" and cook for 11 minutes.
Keep batches warm in 77C/170F oven on wire rack, loosely covered with foil, until all batches and side dishes are complete.

Pressure Fryer - 325F, 10 minutes (2 open and 8 closed) per Colonel Sanders patent
Deep Fryer - 338F, 12 minutes
Keep batches (5 piece max/batch) warm in 200F oven until both batches and side dishes (i.e. French fries) are complete.
You can't believe how good this tastes and how close it is to the 60's O.R.
It's not the O.R., but it's dadgum close.

And I know for a fact that right up until he passed, he was still cooking and researching with great gusto and enthusiasm.
He will be sorely missed by us all. I know that I, for one, had an enormous amount of respect for him. I also believe that wherever he is right now, it will be a better place, where he rests in great comfort and ease.
My sympathies go out to his wife, his children, and of course, to his grandchildren, who use to devour the fried chicken he made, with delight, zest and relish!
I love you Paul, as every person deserves to be loved; and I wish I'd interacted with you a lot more, this past year... It will be a regret that I carry for a long, long time.

I will continue to monitor this site to ensure the idiot spammer doesn't attack like he did elsewhere.
Friends, this has been a long and sometimes tedious journey, but I now believe we have reached our goal.
