Didn't analysis of 99-X reveal that it has hardly a scant presence of capsaicin? That would align with Mild Paprika, and fail to align with Cayenne Pepper.

Does it show Red Pepper on the bag? yes. If you pause it at the right time you can just make it out. sage, allspice, red pepper (the red and pepper is on 2 lines) and then i can't read what's after that. Contains: Pepper, MSG, Salt, Sage, Allspice, Red Pepper and other Natural Herbs and Spices.

Jwow estimated about .1g cayenne in 26oz going by the level of capsaicin. He said the MK cayenne was quite hot. No idea if you can estimate the amount of paprika that would be equal too.

If Mild Paprika is on the order of 275 Scoville and Cayenne Pepper is on the order of 40,000 Scoville, then it would be:
40,000/275 x 0.1 gram = 14.54 grams of Mild Paprika. Or about 1/2 Ounce of Mild Paprika in a 26 ounce Bag.

To make this more clear, 1/2 Ounce of Mild Paprika and 0.1 gram of Cayenne Pepper should deliver roughly the same amount of capsaicin. In my opinion, realistically it was far more likely that in 1939 Colonel Sanders added 1/2 Ounce of Mild Paprika vs. adding 0.0035 Ounces of Cayenne Pepper.

New circa 1939 26 Ounce Bag proposal: 12.0 Ounces Pepper (Half White, Half Black) 3.00 Ounces Salt
2.00 Ounces Coleman's Dry Mustard Powder (1)
2.00 Ounces Ginger (2)
1.50 Ounces Allspice (3) 1.50 Ounces Caraway Seed (4) 1.00 Ounces Sage (5)
1.00 Ounces Anise Seed (6) 0.50 Ounces Mild Paprika (7) 0.50 Ounces Mace (8) 0.50 Ounces Clove (9) 0.25 Ounces Thyme (10) 0.25 Ounces Marjoram (11) Add to 25 Lbs. Pastry Flour plus 3.75 Lbs. Salt

Just realised i should have said 26grams. 0.1g cayenne in a 26g spice mix. Sorry.

Just realised i should have said 26grams. 0.1g cayenne in a 26g spice mix. Sorry. What you are saying now is that there is "potentially" 1/10 ounce of Cayenne Pepper in the 26 ounce bag. But it could factually be any capsaicin containing pepper, and does not have to be Cayenne Pepper at all.

I never thought KFC of old was spicy. It had a black pepper flavor down your throat (after taste) while eating but not spicy on the tongue. Kids would not be able to eat spicy. We all know kids loved KFC.

Anthony does believe he missed out on big money when CHS sold the business. CHS could not see the future where his relatives would live off of his success. That is a shame. He only thought about the time then. He thought 2 million was enough for him. Had it stayed in the family, Anthony would not have to live in the attic but would be living a life of luxury.

Yep. Cayenne was just a guess by jwow going by the amount of capsaicin measured in the 99-x and the amount measured in MK cayenne . I don't know if MK sell paprika or other chillies. Sounds like cayenne was the only one he tested for capsaicin amount though.

1/10 of an Ounce of dried Cayenne Pepper would be equaled by roughly the same weight of dried Tabasco Pepper.

1 Ounce of McCormick* Dried/Crushed Red Pepper Flakes (4,000 avg. Scoville per my email inquiry to them) would be the ballpark Scoville equivalent of 1/10 Ounce of Cayenne Pepper.
*Caution: Some other brands advertise as high as 15,000 Scoville for their Dried Red Pepper Flakes (aka, Pizza Pepper Flakes).
*The reason why I emailed McCormick and asked for their Scoville info. is that I was eating Pizza at my oldest Daughter's house and she had McCormick dried red pepper flakes, and I couldn't get my Pizza hot despite pouring a bunch more on than I usually do at home. I have Firehouse brand dried red pepper flakes that are on the 15,000 Scoville side at my house.
